Watermelon & Feta Salad with Basil and Balsamic

Ingredients

  • 4 cups seedless watermelon, cubed or scooped into balls

  • ⅓ cup crumbled feta cheese

  • ¼ small red onion, thinly sliced

  • 2 tbsp fresh basil leaves, torn or chiffonade

  • 1 tbsp extra-virgin olive oil

  • 1 tbsp balsamic vinegar (or balsamic glaze for more sweetness)

  • Salt and freshly ground black pepper, to taste


Instructions

  1. Prep Ingredients:Cube the watermelon, crumble the feta, and thinly slice the red onion. Tear or chiffonade the basil leaves.

  2. Assemble the Salad:In a large serving bowl or platter, gently toss together the watermelon, red onion, and basil.

  3. Add Cheese & Dressing:Sprinkle with feta, then drizzle with olive oil and balsamic vinegar (or glaze). Season lightly with salt (go easy—feta is salty) and pepper.

  4. Serve:Serve immediately for best texture and freshness. Optional: chill watermelon cubes ahead of time for a colder, crisper bite.
