Brownie Cheesecake Cookie Bars

Layers:

  1. Bottom – Fudgy brownie

  2. Middle – Vanilla cheesecake

  3. Top – Chocolate chip cookie


Ingredients

Brownie Layer:

  • 1/2 cup (1 stick) unsalted butter, melted

  • 1/2 cup granulated sugar

  • 1/2 cup brown sugar, packed

  • 2 large eggs

  • 1 tsp vanilla extract

  • 1/3 cup unsweetened cocoa powder

  • 1/2 cup all-purpose flour

  • 1/4 tsp salt

Cheesecake Layer:

  • 8 oz cream cheese, softened

  • 1/4 cup granulated sugar

  • 1 large egg

  • 1 tsp vanilla extract

  • Pinch of salt

Cookie Dough Layer:

  • 1/2 cup (1 stick) unsalted butter, softened

  • 1/2 cup brown sugar

  • 1/4 cup granulated sugar

  • 1 large egg

  • 1 tsp vanilla extract

  • 1 1/4 cups all-purpose flour

  • 1/2 tsp baking soda

  • 1/4 tsp salt

  • 3/4 cup chocolate chips


Instructions

1. Preheat & prepare pan:

Preheat oven to 350°F (175°C). Line a 9x9-inch square baking pan with parchment paper, leaving overhang for lifting.

2. Make the brownie layer:

  1. In a bowl, whisk melted butter with both sugars.

  2. Add eggs and vanilla; mix well.

  3. Stir in cocoa powder, flour, and salt.

  4. Spread evenly into the prepared pan.

3. Make the cheesecake layer:

  1. In a clean bowl, beat cream cheese until smooth.

  2. Add sugar, egg, vanilla, and salt. Beat until creamy.

  3. Pour and gently spread over brownie layer.

4. Make the cookie dough layer:

  1. Cream butter with both sugars until light and fluffy.

  2. Beat in egg and vanilla.

  3. Mix in flour, baking soda, and salt until just combined.

  4. Fold in chocolate chips.

  5. Drop spoonfuls over cheesecake layer and gently spread or flatten with damp fingers. It won’t fully cover — that’s okay! The dough will spread while baking.

5. Bake:

Bake for 35–40 minutes, or until the top is golden and the center is just set (a slight jiggle is okay).Cool completely, then refrigerate for 2–3 hours for clean slicing.


Serving Tip:

Cut into 16 squares and serve chilled or at room temperature. Great with a glass of milk or scoop of ice cream.
