Ingredients

For the Strawberry Syrup (makes ~1 cup, enough for 4–6 drinks):

  • 1 cup fresh or frozen strawberries, chopped

  • ½ cup water

  • ½ cup granulated sugar

  • ½ tsp vanilla extract (optional, for depth)

For Each Soda:

  • 3–4 tbsp strawberry syrup (to taste)

  • ¾ cup sparkling water or club soda

  • 2–3 tbsp half-and-half or heavy cream (optional, for a creamy version)

  • Ice

  • Whipped cream (optional topping)

  • Fresh strawberries or mint, for garnish


Instructions

Step 1: Make the Strawberry Syrup

  1. In a small saucepan, combine strawberries, sugar, and water.

  2. Bring to a simmer over medium heat, stirring occasionally, until the strawberries break down and the syrup thickens (about 8–10 minutes).

  3. Remove from heat and stir in vanilla if using.

  4. Strain through a fine mesh sieve to remove solids. Let cool.

Step 2: Build the Italian Soda

  1. Fill a glass with ice.

  2. Add 3–4 tbsp of strawberry syrup (more for sweeter flavor).

  3. Pour in the sparkling water, leaving a little room at the top.

  4. Stir gently to mix.

  5. If using, slowly pour in the cream to create a beautiful layered look — stir for a creamy texture.

Step 3: Garnish & Serve

  • Top with whipped cream if desired.

  • Garnish with a strawberry slice, mint sprig, or both.
