Peach & Steak Salad with Peach Vinaigrette

Salad Ingredients
1 lb flank steak, cooked to your liking and thinly sliced
2 ripe peaches, pitted and sliced
2 large red onions, thinly sliced and separated into rings
3 tbsp chopped cashews
1 avocado, sliced
4 cups mixed salad greens
⅓ cup crumbled blue cheese (or more to taste)
1 tsp salt
1 tsp black pepper
Peach Vinaigrette Ingredients
1 large ripe peach, peeled and roughly chopped
1 tbsp brown sugar
2 garlic cloves
¼ cup light olive oil (or neutral oil)
4 tbsp white wine vinegar
1 tbsp Dijon mustard
1 tbsp soy sauce
1 tsp salt
1 tsp black pepper
Instructions
Step 1: Cook the Flank Steak (if not already cooked)
Season steak with salt and pepper.
Heat a grill pan or skillet over medium-high heat with a touch of oil.
Cook steak about 4–5 minutes per side (for medium rare), depending on thickness.
Let rest 5–10 minutes, then slice thinly against the grain.
Step 2: Make the Peach Vinaigrette
Add chopped peach, brown sugar, garlic, olive oil, vinegar, mustard, soy sauce, salt, and pepper to a blender or food processor.
Blend until smooth. Taste and adjust seasoning if needed.
Step 3: Assemble the Salad
In a large bowl or platter, layer the salad greens, peach slices, red onion rings, avocado, and cashews.
Top with sliced steak and crumbled blue cheese.
