Honey Chipotle Chicken Tacos

Ingredients

For the Crispy Chicken

  • 1 lb boneless, skinless chicken breasts, sliced into strips

  • ½ cup all-purpose flour

  • 1 tsp salt

  • ½ tsp black pepper

  • ¼ tsp cayenne pepper

  • 2 eggs, whisked

  • 1 cup panko bread crumbs

  • 2 tbsp melted butter

For the Honey Chipotle Sauce

  • ¼ cup honey

  • 2 tbsp brown sugar

  • 2 tbsp ketchup

  • 1–2 chipotles in adobo sauce, pureed

  • 2 cloves garlic, pressed or minced

  • 1 tbsp apple cider vinegar

  • ½ tsp cumin

  • ½ tsp dried oregano

  • ½ tsp onion powder

  • ¼ cup water

  • 1 tsp cornstarch + 1 tsp water (mixed into a slurry)

To Serve

  • Flour or corn tortillas, warmed

  • Fresh cilantro, chopped

  • Fresh lime juice and lime zest

  • Optional: sliced avocado, slaw, or cotija cheese


Instructions

Step 1: Bread the Chicken

  1. Preheat oven to 425°F (220°C). Line a baking sheet with parchment or foil and lightly grease.

  2. Set up three shallow bowls:

    • Bowl 1: flour + salt + black pepper + cayenne

    • Bowl 2: whisked eggs

    • Bowl 3: panko breadcrumbs

  3. Dredge chicken strips in flour, dip in egg, then coat in panko.

  4. Arrange on a baking sheet and drizzle or brush with melted butter.

Step 2: Bake the Chicken

Bake for 18–20 minutes, flipping halfway, until golden brown and cooked through.

Step 3: Make the Honey Chipotle Sauce

  1. In a saucepan, combine honey, brown sugar, chipotle puree, ketchup, garlic, vinegar, cumin, oregano, onion powder, and water.

  2. Bring to a simmer over medium heat.

  3. Stir in cornstarch slurry and simmer 1–2 minutes until thickened.

  4. Taste and adjust heat/sweetness. Remove from heat and stir in lime zest and juice to brighten it up.

Step 4: Toss Chicken in Sauce

Once baked, transfer chicken strips to a bowl and toss with the warm honey chipotle sauce to coat.

Step 5: Assemble the Tacos

  1. Fill warm tortillas with saucy chicken.

  2. Top with fresh cilantro, extra lime juice, and any desired toppings (e.g., slaw, avocado, cheese).

  • Pair with a creamy lime slaw, chipotle crema, or grilled corn for a full meal.
