Crispy sourdough stuffed with melty mozzarella, tangy kimchi, creamy Kewpie, and a touch of honey
Prep Time: 5 minutes
Cook Time: 8–10 minutes
Serves: 1 (easily doubled or tripled)
Ingredients
2 slices sourdough bread
½–⅔ cup well-drained kimchi, chopped
1 tbsp Kewpie mayo (plus more for the outside of the bread)
½ tbsp honey (or to taste)
⅔ cup shredded mozzarella cheese (or enough to generously layer)
Butter or more Kewpie, for grilling
Instructions
1. Prep the Kimchi
Chop the kimchi into bite-sized pieces and drain it well using a paper towel or strainer to avoid sogginess in the sandwich.
2. Build the Sandwich
Lightly spread Kewpie mayo on the inside of both slices of bread.
On one slice, layer:
Half of the mozzarella
A generous amount of kimchi
A light drizzle of honey (⅓–½ tbsp)
The rest of the mozzarella
Top with the second slice of bread, mayo-side in.
3. Grill It
Spread a thin layer of Kewpie mayo or softened butter on the outside of both slices of bread (this helps create that golden, crispy crust).
Heat a skillet over medium-low heat.
Grill the sandwich 3–5 minutes per side, pressing lightly, until golden brown and the cheese is fully melted.
4. Serve
Let it rest for 1–2 minutes so the cheese sets slightly.
Slice in half and serve warm with a small drizzle of honey on top if you want extra sweet contrast.
Optional Add-Ins
Add sliced scallions or a pinch of toasted sesame seeds inside for extra flavor
Use sharp cheddar alongside mozzarella for extra tang
