Chocolate Cupcakes with Caramel Cream Cheese Frosting


Chocolate Cupcake Ingredients (makes 12–15 cupcakes):

  • 1 ½ cups all-purpose flour

  • 1¼ cups granulated sugar

  • ¾ cup unsweetened cocoa powder

  • 1 ½ tsp baking soda

  • ¾ tsp baking powder

  • ¾ tsp salt

  • ½ tsp espresso powder (optional but enhances chocolate flavor)

  • 2 large eggs

  • ¾ cup buttermilk

  • ¾ cup warm water

  • ¼ cup olive oil

  • 1 tsp vanilla extract


Instructions for Cupcakes:

  1. Preheat oven to 350°F (175°C) and line a muffin tin with cupcake liners.

  2. Mix dry ingredients: In a large bowl, whisk together flour, sugar, cocoa powder, baking soda, baking powder, salt, and espresso powder.

  3. Add wet ingredients: Add eggs, buttermilk, warm water, olive oil, and vanilla to the dry ingredients. Beat until the batter is smooth (batter will be thin — that’s okay!).

  4. Fill and bake: Pour batter into cupcake liners, filling each about 2/3 full.Bake for 18–22 minutes, or until a toothpick comes out clean.Cool completely before frosting.


Caramel Cream Cheese Frosting Ingredients:

  • 8 oz cream cheese, room temperature

  • 4 tbsp salted butter, room temperature

  • ½ cup caramel sauce (store-bought or homemade)

  • 1 tsp vanilla extract

  • 3 cups confectioners’ sugar, divided


Instructions for Frosting:

  1. In a large bowl, beat the cream cheese and butter together until smooth and creamy.

  2. Add the caramel sauce and vanilla. Beat until combined.

  3. Gradually mix in 2 cups of powdered sugar, then add the final cup as needed to reach your desired sweetness and piping consistency.

  4. Chill slightly if frosting is too soft before piping or spreading onto cooled cupcakes.


Optional Toppings:

  • Drizzle with extra caramel sauce

  • Sprinkle with flaky sea salt or crushed toffee bits

  • Add a chocolate square or caramel candy for garnish
