Creamy Honey Pepper Chicken Mac & Cheese

For the Honey Pepper Chicken

Ingredients

  • 2 boneless, skinless chicken breasts

  • Salt and pepper, to taste

  • 1 tbsp olive oil

  • ½ cup honey

  • ¼ cup soy sauce

  • 2 tbsp pineapple juice

  • 1 tbsp brown sugar

  • 1 tbsp apple cider vinegar

  • 1 tsp ground black pepper (adjust to taste)

  • ½ tsp garlic powder

  • ½ tsp onion powder

  • ¼ tsp paprika


For the Creamy Mac & Cheese

Ingredients

  • 8 oz macaroni pasta

  • 2 tbsp butter

  • 2 tbsp all-purpose flour

  • 1 cup heavy cream

  • 1 cup milk

  • 2 cups shredded sharp cheddar cheese

  • 1 cup shredded mozzarella cheese

  • Salt and pepper, to taste

  • Chopped basil, for garnish (optional)


Instructions

Step 1: Cook the Pasta

  1. Bring a large pot of salted water to a boil.

  2. Cook macaroni according to package instructions until al dente.

  3. Drain and set aside.

Step 2: Cook the Chicken

  1. Season chicken breasts with salt and pepper.

  2. Heat olive oil in a skillet over medium heat. Add chicken and sear for 4–5 minutes per side until golden and cooked through (165°F internal temp). Remove and let rest.

  3. In the same skillet, whisk together:

    • Honey, soy sauce, pineapple juice, brown sugar, apple cider vinegar, black pepper, garlic powder, onion powder, and paprika.

  4. Bring sauce to a simmer and cook for 3–4 minutes until thickened and sticky.

  5. Slice cooked chicken and return it to the pan, tossing to coat in the glaze. Set aside.

Step 3: Make the Cheese Sauce

  1. In a large saucepan, melt butter over medium heat. Whisk in flour and cook for 1–2 minutes to form a roux.

  2. Gradually whisk in milk and heavy cream, stirring constantly until thickened (about 3–4 minutes).

  3. Remove from heat and stir in cheddar and mozzarella until melted and smooth.

  4. Season with salt and pepper to taste. Add cooked pasta and mix until fully coated.

Step 4: Assemble and Serve

  1. Spoon creamy mac and cheese onto plates or into bowls.

  2. Top with sliced honey pepper chicken and drizzle extra sauce from the pan.

  3. Garnish with chopped basil if desired.


Tips

  • Use pre-shredded cheese sparingly—grating it fresh melts better and gives a creamier sauce.

  • Want more kick? Add a pinch of crushed red pepper flakes to the glaze.
