🍐 Caramelized Onion, Pear & Goat Cheese Flatbreads
Flatbread Dough
Ingredients
2 cups (260g) all-purpose flour
1 ½ teaspoons baking powder
1 teaspoon fine sea salt
2 tablespoons olive oil
1 teaspoon maple syrup
¾ cup (175ml) cold water
Olive or Grapeseed oil for cooking
Directions
In a large bowl, whisk together flour, baking powder, and salt.
Make a well in the center, add olive oil, maple syrup, and 2/3 cup water. Stir to combine, adding the rest of the water as needed.
Knead dough on a floured surface until smooth (about 1 minute). Cover and let rest for 10 minutes.
Divide dough into 3 equal pieces. Roll each into a disc ⅛–¼-inch thick.
Heat a skillet over medium with 1–2 tbsp oil. Cook flatbreads 1–2 minutes per side until golden. Keep warm under a towel.

2 large yellow onions, thinly sliced
1 tablespoon butter
1 tablespoon olive oil
Pinch of salt
2 ripe but firm pears, thinly sliced
4 oz goat cheese, crumbled
Optional: fresh thyme, arugula, honey, or balsamic glaze
Caramelize Onions
Heat butter and olive oil in a skillet over medium-low heat.
Add onions and a pinch of salt. Cook slowly, stirring occasionally, for 25–30 minutes until golden and soft. Add water if they begin to stick. Set aside.
Assemble & Serve
Preheat oven to 375°F (190°C) or turn on the broiler.
Top each flatbread with a layer of caramelized onions, pear slices, and goat cheese.
Optional: sprinkle with fresh thyme.
Bake for 5–7 minutes, or broil for 1–2 minutes until cheese softens and edges crisp.
Finish with a drizzle of honey or balsamic glaze and fresh arugula if desired.
