Blueberry Pistachio Salad with Honey-Lemon Dressing

Salad Ingredients

  • 6 cups mixed spring greens

  • 1 cup fresh blueberries

  • ½ cup candied pistachios (store-bought or homemade)

  • ⅓ cup crumbled feta cheese

  • 1 small cucumber, thinly sliced

  • ¼ small red onion, very thinly sliced

  • ¼ cup fresh mint leaves, whole or torn

  • 1 watermelon radish, thinly sliced (optional but beautiful)

Honey-Lemon Dressing Ingredients

  • 3 tbsp olive oil

  • 1 tbsp fresh lemon juice

  • 2 tbsp honey

  • 1 tsp Dijon mustard

  • Salt and black pepper, to taste


Instructions

Step 1: Make the Dressing

  1. In a small bowl or jar, whisk together:

    • Olive oil, lemon juice, honey, Dijon mustard, salt, and pepper.

  2. Shake or whisk until fully emulsified. Taste and adjust salt or honey as needed.

Step 2: Assemble the Salad

  1. In a large salad bowl, add the mixed greens, cucumber, red onion, blueberries, mint, and radish slices.

  2. Sprinkle with candied pistachios and crumbled feta.

Step 3: Dress & Serve

  1. Drizzle with the honey-lemon dressing just before serving.

  2. Gently toss to coat, or serve dressing on the side for guests to drizzle themselves.


Optional Add-Ons

  • Grilled chicken or shrimp for a main dish version

  • Avocado slices for creaminess

  • Swap feta for goat cheese or ricotta salata

  • Add a pinch of crushed red pepper for subtle heat
