Blueberry Pistachio Salad with Honey-Lemon Dressing

Salad Ingredients
6 cups mixed spring greens
1 cup fresh blueberries
½ cup candied pistachios (store-bought or homemade)
⅓ cup crumbled feta cheese
1 small cucumber, thinly sliced
¼ small red onion, very thinly sliced
¼ cup fresh mint leaves, whole or torn
1 watermelon radish, thinly sliced (optional but beautiful)
Honey-Lemon Dressing Ingredients
3 tbsp olive oil
1 tbsp fresh lemon juice
2 tbsp honey
1 tsp Dijon mustard
Salt and black pepper, to taste
Instructions
Step 1: Make the Dressing
In a small bowl or jar, whisk together:
Olive oil, lemon juice, honey, Dijon mustard, salt, and pepper.
Shake or whisk until fully emulsified. Taste and adjust salt or honey as needed.
Step 2: Assemble the Salad
In a large salad bowl, add the mixed greens, cucumber, red onion, blueberries, mint, and radish slices.
Sprinkle with candied pistachios and crumbled feta.
Step 3: Dress & Serve
Drizzle with the honey-lemon dressing just before serving.
Gently toss to coat, or serve dressing on the side for guests to drizzle themselves.
