Balsamic Blueberry Grilled Cheese
Servings: 2 sandwiches

Ingredients
For the Blueberry Balsamic Compote
1 cup fresh or frozen blueberries
1 tbsp granulated sugar
1 tbsp balsamic vinegar
1 tsp lemon juice
Pinch of salt and pepper
For the Sandwich
4 slices sourdough bread
2–3 oz goat cheese, softened
4 slices Havarti cheese
Handful of arugula (optional)
Butter, for grilling
Instructions
Step 1: Make the Blueberry Balsamic Compote
In a small saucepan over medium heat, combine blueberries, sugar, lemon juice, balsamic vinegar, salt, and pepper.
Stir and simmer for 5–7 minutes, until berries burst and sauce thickens slightly.
Remove from heat and let cool slightly. (It will thicken more as it sits.)
Step 2: Assemble the Sandwiches
Butter one side of each sourdough slice.
On the unbuttered side of two slices:
Spread a layer of goat cheese
Spoon on some blueberry compote
Top with 2 slices of Havarti cheese
Add a handful of arugula (if using)
Top with remaining bread slices, buttered side facing out.
Step 3: Grill the Sandwiches
Heat a skillet over medium heat.
Place sandwiches in the skillet and cook for 3–4 minutes per side, pressing gently, until the bread is golden brown and the cheese is melted.
Step 4: Serve
Slice in half and serve warm with extra blueberry compote on the side if desired.
Tips
Want extra tang? Add a little lemon zest to the compote.
Don’t have goat cheese? Cream cheese makes a milder substitute.
