Ingredients (Serves 2)
For the Sandwich:
4 slices of rustic sourdough or country-style bread
1 crisp apple (like Honeycrisp or Fuji), thinly sliced
4–6 oz Brie cheese, sliced (rind on or off, your choice)
2 tbsp butter, softened (for toasting the bread)
For the Maple Dijon Thyme Spread:
1 tbsp Dijon mustard
1 tbsp pure maple syrup
½ tsp fresh thyme leaves (or ¼ tsp dried)
Optional: 1 tsp mayonnaise (for creamier texture)
Instructions
1. Make the Maple Dijon Thyme Spread
In a small bowl, whisk together Dijon mustard, maple syrup, thyme, and (optional) mayo until smooth. Set aside.
2. Assemble the Sandwiches
Spread one side of each bread slice with a thin layer of softened butter (this side will touch the skillet).
Flip the slices and spread the unbuttered side with the maple Dijon thyme mixture.
On two of the slices, layer:
Brie slices (enough to cover the bread)
Thin apple slices (about 6–8 per sandwich)
Top with the remaining bread, mustard side down, butter side out.
3. Grill the Sandwiches
Heat a skillet or griddle over medium-low heat.
Place sandwiches in the pan and cook 3–5 minutes per side, pressing gently with a spatula, until the bread is golden and the Brie is melty.
